- Chicken: If you haven’t already cook or shred your chicken (about 2-3 cups). If using rotisserie chicken, remove the skin and bones, then shred or chop the meat into bite-sized pieces.
- Cream Cheese: Soften 4-6 ounces of cream cheese at room temperature. This makes it easier to mix into the salad ensuring a smooth and creamy consistency.
- Mayonnaise: Measure out 1/4 to 1/2 cup of mayonnaise depending on how creamy you want your salad to be.
- Celery and Onion: Finely dice 1-2 stalks of celery and about 1/4 cup of red onion. These add crunch and a bit of bite to the salad.
- Seasonings: Prepare 1-2 tablespoons of fresh lemon juice along with salt, pepper, and any other seasonings you like, such as garlic powder or Dijon mustard.
In a large bowl combine the mayonnaise, cream cheese, and season salt. Add in the remaining ingredients and gently combine.
Serve immediately as a salad or sandwich–or make in advance (which I think it tastes even better the next day!)
