Cuisine American
- 2 cups cooked chicken diced or shredded; rotisserie chicken works well
- 1/2 cup slivered almonds toasted
- 1/2 cup celery finely chopped
- 1/4 cup red onion finely chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice freshly squeezed
- Salt and pepper to taste
- 1 tablespoon fresh parsley chopped, optional
- Mixed greens or lettuce leaves for serving, optional
Prepare the Chicken: If you haven’t done so already, cook and shred or dice the chicken.
Toast the Almonds: In a dry skillet over medium heat, toast the slivered almonds until they are golden and fragrant. Stir frequently to avoid burning. Set aside to cool.
Mix the Dressing: In a large bowl, combine the mayonnaise, sour cream, Dijon mustard, and lemon juice. Stir until smooth. Season with salt and pepper to taste.
Combine Ingredients: Add the diced chicken, chopped celery, red onion, and toasted almonds to the bowl with the dressing. Stir gently to combine all the ingredients until the chicken is evenly coated with the dressing.
Chill: Cover the bowl and refrigerate the chicken salad for at least 30 minutes to let the flavors meld together.
Serve: Optionally, serve the chicken salad on a bed of mixed greens or lettuce leaves. Garnish with chopped fresh parsley if desired.
