  • 2 cups cooked chicken shredded or diced
  • 1 cup red grapes halved
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup celery chopped
  • 1/4 cup red onion finely chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons plain Greek yogurt or additional mayonnaise for a richer salad
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley chopped, optional

Instructions
